60 Day Challenge

I'm going to sound like a broken record here, but I'm going to attempt to chronicle my journey on the 60 Day Life Time Challenge.

Life Time is doing a Fall 60 day weight/transformation challenge that I signed up for in an attempt to get in shape before my trip to Hawaii (2 months to go!!). There are two categories with a male and female group and four total $10,000 winners!

I feel like this attempt at a challenge will go a little better since there are so many more resources, live check-ins, and accountability buddies available.

I recently met with my trainer/coach and we sat down to talk about my ultimate goal and what I hope to achieve in the next 60 days.

I decided that my number one focus will be nutrition. I've worked with personal trainers before, I had success following TIU workout guides in the past. Last year I dropped 15 pounds following the TIU new year challenge. My biggest struggle was eating right.

Since I'm currently going through some gut issues, well, currently addressing the issues I've had for a while now, I figured what better way then to hop on this bandwagon and really just go all in.

I purchased the D-TOX program which is 3-6 weeks long. It's also similar to an elimination diet which my doctor recommended I do so I can know for sure what foods give me the issues that I have.

I am not going to start week one until next week. It's a little impossible to do with my parents upcoming birthday party I am throwing them at our cabin.

There will be three phases.

Phase/Week 1: Prep
          Start to eliminate caffeine, alcohol, refined sugars, soy, etc.

Phase/Week 2: Detox
          Eat super clean/approved foods and incorporate supplements and meal replacement. The cafe even offers D-TOX approved pre-made meals.

Phase 3/Week 3-6: Restore
          Add in one food group at a time and pay attention to it's side effects. If something isn't sitting right, make note and eliminate the food from my diet.

I'm pretty excited that I am participating in this challenge and it's great to have an outline of eliminating and re-introducing food back in to my diet. When my Dr. first recommended an elimination diet, I was pretty stumped and overwhelmed with all the information out there.

I'm looking forward to trying new foods and recipes. In fact, I made a new-to-me Avocado Pesto last night that's the bomb.com. I'm sure having it with proscuitto and noodles isn't the best option. Maybe next time I'll go with zoodles, or spiralized carrots. That sounds good!

Avocado Pesto (4 servings)
1 Avocado
1 Bunch Basil
Juice from 1 lemon
1 Tsp salt
Garlic cloves (I used 6 but I love garlic)
2 Tablespoons EVOO

Put-em (food processor) all together and what have you got? Bippity-boppity bippity-boppity bippity-boppity boo!
