Holy Vegetables Bat Man

Day one went much better than my first day of juicing back in January and I'm thinking it's because I actually ate a real meal for lunch. It left me with the energy I needed to rock out at the gym.

I had a 3 mile run scheduled for today and it felt really easy.

After my run I did a 60 minute spin class. I wasn't sure how my legs were going to feel, but surprisingly they still felt really good and I think this was one of my better classes. I was able to stay with the instructor when she would increase resistance and just felt really awesome all around.

After the gym I made my dinner and breakfast.

There is no way I could eat all that if I had to chew it, but I was able to drink it all and feel pretty satisfied.

Dinner consisted of:

2 kale leaves
2 hand fulls spinach
3 celery stalk
2 carrots
1 cucumber
2 granny smith apples
1/2 green pepper
1 tomato 
1 beet

I like to make my dinner and while I drink that, make my breakfast and store in the fridge until morning.

If there's one tip I have, it's to line the basket that all the fruit bits get discarded in to with a plastic bag/ produce bag from the grocery store. It's just one less step in the clean up process.


How soon before a trip do you start packing?

I'm so ready for my vacation since it's been three years since I've had a week long vaca outside of MN/WI. I'm starting to pull summer dresses, swim suits, tanning oil and flip flops in preparation for packing, but I still have 15 days!

I follow the resort we are staying at on the book of faces and the pictures are so gorgeous I just can't wait to get there!



  1. Start packing now and then take everything out of your suitcase and do it again. Is it weird that I find that enjoyable?

    1. That's not weird at all! I love to pack and for whatever reason, I always try on everything first before packing. Now that's weird!
