Fall is in the air

Summer is winding down and Fall is in the air...or at least it was over the weekend in Northern Wisconsin, and it was great! We got up to the cabin around 7:00 PM Friday. Traffic was a b*tch, and I won't be talking to her until eternity because it took us 2.5 hours to get there! Ok, really 2.5 hours is a breeze considering most Minnesotans sit in their tin boxes for 4+ hours on traffic free days to get to their home-away-from-home.

The fam bam has been obsessed with this corn recipe and with how amazingly sweet the corn is right now, it really adds that extra burst of flavor and works great with the salty pancetta.

4 ears of corn - cut the kernels off
Saute pancetta until crisp, remove from pan, but leave the drippings
Thinly slice about 6 green onions and dice a jalapeno pepper. Saute slightly in the pancetta drippings
Chop some fresh cilantro and set aside
When ready to assemble, add some butter to the pan with the onions and jalapeno and add the corn and saute until warm but still crisp. 
Add pancetta, season with salt and pepper and top with cilantro

I wish I had a picture because it is so delicious and easy to make.

After dinner we bundled up and headed out to the fire. Are you a middle child? Tim and I have discussed this several times, that middle children are pyro's! My mom is sort of in the middle, she's one of 8, and she loves fire too. It's kind of crazy, we just kept grabbing more and more wood and trying to burn different things. Lauren wanted to see if the fire was hot enough for a can to burn, so we tested and, yes, it was inf act hot enough to melt a beer can. But it was a Busch light can, so it was probably cheap! We listened to some tunes on good 'ol Pandora as we watched shooting stars fly through the sky. It was a gorgeous night.


The next afternoon Andrea and Louis came up to the cabin. Once they arrived we loaded up the boat and headed to the sand bar. The water was a LOT chillier than it has been in a while, but we stayed out until close to 7:00 before I got grouchy and wanted to eat. Again, it was a beautiful 'Fall' night and the start to a meteor shower, so we had another big fire. The neighbs' were up, so I fire hopped from one to the next, all 10 feet that separate our fires.

A few of us stayed up until mid afternoon on Sunday because it was such a nice day. We took a final boat ride and stuffed our bellies before heading back to the cities. Kari, Lauren and Tim all headed out a little before me so I headed home alone. Sometimes I love that ride by myself. Especially because I can sing as loud as I want and no one is there to judge me!

Check out this photo from my office on Thursday. There was a little rain storm that moved through. Kind of neat to watch from 22 stories up.


Stay tuned these next couple of weeks. Lots of fun stuff going on! Tomorrow I'm heading to the Twins game, and we have a suite, Friday I'm going to Milwaukee for Irish Fest, then the following week starts my birthday celebration and bam! We are at Labor Day! I promise to take more pics and share them!
